With Asparagus, It Pays
To Take Short Cuts.
Asparagus is actually a member of the lily family and that's why it must be handled
very carefully. The highest quality asparagus is harvested early and cut shorter
– while the stalk is at its greenest, the buds their tightest, and when it is medium
size in diameter.
Once cut, fresh asparagus will literally fall apart if proper temperatures and humity
levels are not maintained. The buds will open and the woody tissue will develop rapidly,
causing a distinct loss of flavor and tenderness.
Because of the delicate nature of asparagus, our standards are more stringent than
most supermarkets. They're even higher than the top government grade. And, since
our spears are an entirely edible shorter cut, you're never short changed.
These scrupulous specifications for asparagus are what Safeway shoppers have come
